This dish is great served on rice or you can shred it up and make chicken tacos or taco salad!
Ingredients:
- 4-5 boneless chicken breasts (Thawed)
- 1/2 cup finely diced onion
- 1 taco seasoning packet
- 1 15 oz. can diced tomatoes
- 1 teaspoon fresh minced garlic
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 4 oz. can of diced chiles
- 1/4 cup of cilantro
- 4 tablespoons of lime juice
Directions:
- In a bowl, mix together the diced tomatoes, diced chiles, onion, garlic, salt and pepper.
- Add the thawed chicken to your slow cooker
- Top with the taco seasoning packet and lime juice. Pour the diced tomato mixture over the top.
- Cover and cook on low for 6 hours
- When ready to serve, top the chicken with some of tomato mixture. Make your dinner more fun by garnishing with cilantro, onion or avocado.
