Chicken Sausage Stuffed Pitas w/ Cucumber Garlic Yogurt Sauce

Ingredients:
  • 4 chicken precooked sausage links (12 oz.) I use the Johnsonville - Garlic, Cheese & red pepper
  • 5 pita pockets (or 2.5 pita loafs, cut in half)
  • 1 tablespoon olive oil
  • 1/2 cucumber, sliced
  • Garlic Salt (to taste)
SAUCE: (Make in Advance)
  • 1 cup plain Greek yogurt
  • 1 tablespoon sour cream
  • 1/2 teaspoon white vinegar
  • 1/4 teaspoon lemon juice
  • 1/4 cup cucumber, peeled & finely diced
  • 3 tablespoons of green onions, finely diced
  • 1 teaspoon of fresh minced garlic
  • 1/4 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  1. Stir together yogurt, sour cream, vinegar, lemon juice, green onion, cucumber, garlic, oregano, salt, and pepper in a bowl. Cover and chill for 1 hour. (For best results: Chill overnight so the flavors blend more)

Directions:
  1. Slice up chicken sausages
  2. Warm up 1 tablespoon of olive oil in a saute pan on medium heat. Add sliced sausages. Sprinkle garlic salt lightly on sausages. Saute for 5 minutes or until the sausages are lightly brown on the outside.
  3. Stuff 1/2 cup of sausage in a warm pita pocket, Add 3 slices of cucumber, and top with a decent amount of cucumber garlic yogurt sauce.
